Peanut Butter and Banana French Toast Muffin

Ingredients
- 1 whole grain english muffin
- 1 banana
- 2 Tbs pb2
- 2 egg whites
- 1 tsp vanilla extract
- 1 tsp stevia in the raw
- 2 Tbs water
- 1/4 tsp vanilla extract
Instructions
- Heat a non stick pan sprayed with cooking spray over medium heat
- Whisk together egg whites, cinnamon, stevia and vanilla
- Split english muffin in two and dip into egg white mixture so that it's well coated
- Cook english muffin for about two minutes, until it is golden brown and egg whites are cooked
- Flip and cook on the other side for about a minute until egg whites are cooked
- Stir together PB2 and water (you can just use peanut butter but calorie count will be higher)
- Spread PB2 onto english muffin and top with sliced banana
