Peanut Butter and Banana French Toast Muffin

Ingredients
  1. 1 whole grain english muffin
  2. 1 banana
  3. 2 Tbs pb2
  4. 2 egg whites
  5. 1 tsp vanilla extract
  6. 1 tsp stevia in the raw
  7. 2 Tbs water
  8. 1/4 tsp vanilla extract
Instructions
  1. Heat a non stick pan sprayed with cooking spray over medium heat
  2. Whisk together egg whites, cinnamon, stevia and vanilla
  3. Split english muffin in two and dip into egg white mixture so that it's well coated
  4. Cook english muffin for about two minutes, until it is golden brown and egg whites are cooked
  5. Flip and cook on the other side for about a minute until egg whites are cooked
  6. Stir together PB2 and water (you can just use peanut butter but calorie count will be higher)
  7. Spread PB2 onto english muffin and top with sliced banana
