Spicy Mexican Penne

This is a great meal. It's crazy cheap to make, will fill you up, and is very healthy.

Ingredients
  1. 1 box whole grain penne
  2. 1 16 oz can black beans, strained
  3. 1 16 oz can kidney beans, strained
  4. 1 16 oz can fire roasted diced tomatoes
  5. 1 16 oz can corn, strained
  6. 1 onion, diced
  7. 1 tbs olive oil
  8. 2-4 cloves garlic (depending on how much you prefer)
  9. 1 package tex mex chili spice blend
  10. 2 cups reduced fat mexican shredded cheese
Instructions
  1. Boil water for the pasta and cook according to directions on the box. Strain.
  2. Heat skillet on medium heat.
  3. Add olive oil and onion.
  4. Saute onion until translucent, about 5 minutes
  5. Add garlic and saute until fragrant, about 2 minutes
  6. Add tomatoes, beans, corn, and spice blend and reduce heat to simmer.
  7. Simmer 10 minutes.
  8. Add pasta to the bean mixture and stir.
  9. Top with cheese.
  10. Enjoy!

  1. I doubled this recipe so we have leftovers!
