Spicy Mexican Penne

This is a great meal. It's crazy cheap to make, will fill you up, and is very healthy.

Ingredients
- 1 box whole grain penne
- 1 16 oz can black beans, strained
- 1 16 oz can kidney beans, strained
- 1 16 oz can fire roasted diced tomatoes
- 1 16 oz can corn, strained
- 1 onion, diced
- 1 tbs olive oil
- 2-4 cloves garlic (depending on how much you prefer)
- 1 package tex mex chili spice blend
- 2 cups reduced fat mexican shredded cheese
Instructions
- Boil water for the pasta and cook according to directions on the box. Strain.
- Heat skillet on medium heat.
- Add olive oil and onion.
- Saute onion until translucent, about 5 minutes
- Add garlic and saute until fragrant, about 2 minutes
- Add tomatoes, beans, corn, and spice blend and reduce heat to simmer.
- Simmer 10 minutes.
- Add pasta to the bean mixture and stir.
- Top with cheese.
- Enjoy!

- I doubled this recipe so we have leftovers!
