Banana bread is delicious!!! I love it…but I don’t love how regular banana bread has a TON of added sugar, white flour and FAT! So I did a little research and tried out this recipe for myself. It’s pretty darn good. Give it a shot!

  • 3 large ripe bananas, mashed
  • 1 3/4 cup coconut flour or whole wheat flour–coconut flour may not hold up as well and make it taste more like cake! But still delicious =)
  • 1/2 cup no-sugar-added applesauce
  • 2 eggs, beaten
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup honey or agave

Directions

Preheat oven to 350 degrees. In a large mixing bowl, combine flour, baking powder, baking soda, cinnamon and salt, mix well.
In a medium mixing bown, combine mashed bananas, eggs, applesauce, honey, and vanilla extract. Mix thoroghly. Add wet mixture to bowl containing the dry ingredients and still until just blended.
Spoon batter into large loaf pan (9×5) sprayed with nonstick spray. Bake for about 50 minutes (keep an eye on it….it could take less time!), or until knife inserted in middle of loaf comes out clean. Alow loaf to cool slightly, cut into 8 slices.  YUM!
