All I can say is OMG. I’ve been making this for years…it’s SO easy and tasty–you won’t believe that it’s actually healthy! 

When I eat this I usually keep the portion pretty small–but if you want to eat more just add more veggies! The more veggies the better! My favorite to add to this meal are broccoli and spinach. 

 

Three Cheese Gnocchi with Shrimp

Ingredients
  1. 1 onion, diced
  2. 3 cloves garlic, diced (add more or less to your liking)
  3. 12 oz package of shrimp, cooked, thawed, peeled, tails off
  4. 1 package gnocchi
  5. 1 TBS olive oil
  6. 1 cup low fat ricotta cheese
  7. 1/2 cup goat cheese
  8. 1/4 cup parmesan cheese
  9. Veggies! As many as you want--I prefer broccoli and spinach in this dish
  10. 1 cup pasta water (reserve when draining gnocchi)
  11. handful of fresh basil, chopped
  12. 1 tsp. salt
Instructions
  1. Cook gnocchi according to directions on the box
  2. Heat a pan over medium high heat and add olive oil
  3. Saute onion 3-5 minutes until translucent
  4. Add garlic and sauté until fragrant, 1-2 minutes, careful not to burn
  5. Add veggies and cook 5-10 minutes, until veggies are tender (may need to add some water to avoid veggies sticking to the bottom of the pan)
  6. Add cheeses, salt, pasta water, gnocchi, shrimp and basil
  7. Stir well and cook for an additional minute or two
  8. Top with shaved parmesan, if desired
  9. Eat!
