OMG! I can’t believe I’ve never made my own protein bars!!! I’ve spent sooooo much money on protein bars that are mostly filled with not so healthy ingredients. No more!! This was super easy to make, cheaper than store bought, and WAY healthier!! Homemade protein bars rock!! Sorry…i’m just a little excited…in case you couldn’t tell =) Make these!!!! Oh, and if coconut isn’t your thing–no worries you can leave it out and you’ll just have chocolate protein bars =) 

 

Chocolate Coconut Protein Bars

Ingredients
  1. 1/2 cup walnuts
  2. 1/2 cup almonds
  3. 2 cups dates
  4. 1 cup rolled oats
  5. 1/4 cup agave (or honey)
  6. 4 scoops protein powder
  7. 1/2 cup shredded coconut (I used sweetened because that's all they had at the store. I'm sure unsweetened would work just fine too)
  8. 3 TBS cacao powder (or cocoa powder)
  9. 2 tsp vanilla extract
  10. 1 tsp salt
Instructions
  1. All all ingredients except shredded coconut into a food processor.
  2. Process until all ingredients are combined.
  3. Add coconut and process until just combined.
  4. You can make these traditional protein bars and roll them out into an 8x8 baking dish OR roll them into balls! Totally up to you!
  5. Refrigerate until ready to eat.
Notes
  1. Consistency may vary based on the protein powder you use. If you think the batter is too dry to stick, add more dates/agave. I used 2 scoops of Syntha 6 chocolate protein powder--it has 200 calories/scoop. The typical protein powder has 100 calories/scoop which is why I put 4 scoops. If you want to make this a superfood treat, sub Shakeology for the protein powder!
