Nom nom nom. Pumpkin pie is all over the place this time of year! This healthy pumpkin pie has a TON less calories than your average pumpkin pie–mostly because there isn’t any crust! You could actually eat this ENTIRE pie and it would still have less calories than your average slice of pumpkin pie. Yup. I hope you enjoy this crustless pumpkin pie as must as I did =)

Ingredients
- 15oz pure pumpkin (NOT pumpkin pie filling--there's a difference!)
- 1/2 cup light canned coconut milk
- 3 eggs
- 1/3 cup honey OR xylitol OR stevia in the raw
- 1 tsp cinnamon
- 1/2 tsp pumpkin spice
- 1/2 tsp Himalayan salt
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350
- Add all ingredients in a medium bowl and mix well
- Add ingredients into a baking pan
- Bake for about 65 minutes--but check after 45 minutes since oven times vary
- They are done when the sides are starting to get golden brown and you can stick a fork in and comes out clean

- Calorie count is going to vary based on sweetener used. This was calculated using stevia in the raw.
