I loooooove fruity mixed drinks!!! Unfortunately, they have way too much sugar….so I limit myself. I’ve learned to make amazing healthy cocktails at home with just a fraction of the sugar. This healthified pina colada recipe rocks! I hope you enjoy =) 

Healthified Pina Colada

Ingredients
  1. 1 cup light coconut milk (in the carton, not the can)
  2. 1.5 oz rum (I found this awesome coconut spiced rum sweetened with truvia--regular rum will work too though)
  3. 1 cup frozen pineapple
  4. stevia, to taste (I used about 10 drops liquid stevia)
  5. 3-5 drops coconut extract
  6. 1/2 cup ice cubes (optional)
Instructions
  1. Add all ingredients to a blender and blend until nice and frothy. Pour into a fancy glass and enjoy!
