I’ve heard people say that healthy food doesn’t taste good. They obviously haven’t tried this recipe =) This is very simple to make and is super tasty!
Shrimp Pesto with Whole Grain Spaghetti

Ingredients
- 1 12 oz package of shrimp, cooked, peeled, deveined, thawed, tails removed
- 1 package of whole grain spaghetti
- 12 oz pesto
- 32 oz fire roasted diced tomatoes, drained
- 1 onion, diced
- 1 tsp chili pepper flakes (more or less to taste)
- 1 TBS olive oil
- 2 cups reduced fat mozzarella cheese, shredded
Instructions
- Cook pasta according to directions on the box
- Heat a large pan over medium heat
- Add olive oil
- Add onion and sauté 3-5 minutes until onion is translucent
- Add tomatoes and cook about 5 minutes until the juices start to cook down
- Add pesto and shrimp and cook 3 more minutes--careful not to overcook the shrimp!
- Add pasta and cheese
- Stir to combine
- Enjoy!
