I’ve heard people say that healthy food doesn’t taste good. They obviously haven’t tried this recipe =) This is very simple to make and is super tasty! 

Shrimp Pesto with Whole Grain Spaghetti

Ingredients
  1. 1 12 oz package of shrimp, cooked, peeled, deveined, thawed, tails removed
  2. 1 package of whole grain spaghetti
  3. 12 oz pesto
  4. 32 oz fire roasted diced tomatoes, drained
  5. 1 onion, diced
  6. 1 tsp chili pepper flakes (more or less to taste)
  7. 1 TBS olive oil
  8. 2 cups reduced fat mozzarella cheese, shredded
Instructions
  1. Cook pasta according to directions on the box
  2. Heat a large pan over medium heat
  3. Add olive oil
  4. Add onion and sauté 3-5 minutes until onion is translucent
  5. Add tomatoes and cook about 5 minutes until the juices start to cook down
  6. Add pesto and shrimp and cook 3 more minutes--careful not to overcook the shrimp!
  7. Add pasta and cheese
  8. Stir to combine
  9. Enjoy!
