Peanut Butter and Cream Cheese Stuffed Protein Pancakes

I LOVE pancakes…as a lit­tle girl any­time we would go out to break­fast, I would get straw­berry pan­cakes LOADED with whipped cream and syrup. Now that I’m eat­ing clean, I still want those pan­cakes, just with­out all of those calo­ries. I think this recipe does a pretty darn good job of achiev­ing that.

Ingredients
  1. 1/2 cup old fash­ioned oats
  2. 6 egg whites
  3. 1 tbs apple sauce
  4. pinch Himalayan salt
  5. 4 tbs fat free cream cheese
  6. 1 tbs peanut but­ter or pb2
  7. pinch cin­na­mon
  8. ste­via to taste
  9. 1 cup frozen straw­ber­ries
Instructions
  1. Heat a non stick pan over medium heat.
  2. Heat a cup of frozen straw­ber­ries until warm and gooey.
  3. Blend the oats, egg whites, apple sauce and salt until well com­bined.
  4. Spray the pan with non stick spray and pour the pan­cake ingre­di­ents.
  5. I made mine as a big giant pan­cake.
  6. Once the top of the pan­cake starts to set and small bub­bles form, flip the pan­cake.
  7. Mix the remain­ing ingre­di­ents except for the straw­ber­ries for the cream cheese fill­ing.
  8. Microwav­ing them together for 30 sec­onds will help mix them.
  9. Spread the cream cheese fill­ing onto the pan­cake and fold the top of the pan­cake over.
  10. Remove from heat and top with cin­na­mon, ste­via (if desired) and straw­ber­ries.
  11. Enjoy!
