Peanut Butter and Cream Cheese Stuffed Protein Pancakes

I LOVE pancakes…as a little girl anytime we would go out to breakfast, I would get strawberry pancakes LOADED with whipped cream and syrup. Now that I’m eating clean, I still want those pancakes, just without all of those calories. I think this recipe does a pretty darn good job of achieving that.

Ingredients
- 1/2 cup old fashioned oats
- 6 egg whites
- 1 tbs apple sauce
- pinch Himalayan salt
- 4 tbs fat free cream cheese
- 1 tbs peanut butter or pb2
- pinch cinnamon
- stevia to taste
- 1 cup frozen strawberries
Instructions
- Heat a non stick pan over medium heat.
- Heat a cup of frozen strawberries until warm and gooey.
- Blend the oats, egg whites, apple sauce and salt until well combined.
- Spray the pan with non stick spray and pour the pancake ingredients.
- I made mine as a big giant pancake.
- Once the top of the pancake starts to set and small bubbles form, flip the pancake.
- Mix the remaining ingredients except for the strawberries for the cream cheese filling.
- Microwaving them together for 30 seconds will help mix them.
- Spread the cream cheese filling onto the pancake and fold the top of the pancake over.
- Remove from heat and top with cinnamon, stevia (if desired) and strawberries.
- Enjoy!
