Mmmmmmm I LOVE pancakes!! When I was growing up I could eat an entire stack of pancakes with gooey sugary strawberries, whipped cream AND maple syrup on top. Now that I’m eating healthier, I’ll pass on all of that sugar–but I can still have my pancakes! Here is my recipe for Peanut Butter Protein Pancakes =)
Peanut Butter Protein Pancakes

Ingredients
- 1/2 cup quick cooking oats (you can use rolled oats, just soak them in the egg whites for 15 minutes before cooking)
- 1/2 cup egg whites
- 1 tsp vanilla extract
- 1/2 tsp Himalayan salt (regular salt will work too)
- 1/4 tsp cinnamon
- 1 Tbs stevia (or to taste)
- 2 Tbs PB2 (or peanut butter)
- 1/4 tsp baking powder
Instructions
- Heat a pan to medium heat
- Mix together all ingredients--by hand or in a blender
- Spray pan with cooking spray
- Pour half of the batter in the pan and cook until bubbles start to form on top
- Flip pancake and cook another minute or so until done
- Do the same with the other half of the batter
- Top with coconut oil, stevia, honey, banana, peanut butter--whatever you want!
Notes
- I find that using actual peanut butter in this recipe will give the pancakes a little more moisture--but if you're watching your calories they still taste good with PB2 =)
