Mmmmmmm I LOVE pancakes!! When I was growing up I could eat an entire stack of pancakes with gooey sugary strawberries, whipped cream AND maple syrup on top. Now that I’m eating healthier, I’ll pass on all of that sugar–but I can still have my pancakes! Here is my recipe for Peanut Butter Protein Pancakes =) 

Peanut Butter Protein Pancakes

Ingredients
  1. 1/2 cup quick cooking oats (you can use rolled oats, just soak them in the egg whites for 15 minutes before cooking)
  2. 1/2 cup egg whites
  3. 1 tsp vanilla extract
  4. 1/2 tsp Himalayan salt (regular salt will work too)
  5. 1/4 tsp cinnamon
  6. 1 Tbs stevia (or to taste)
  7. 2 Tbs PB2 (or peanut butter)
  8. 1/4 tsp baking powder
Instructions
  1. Heat a pan to medium heat
  2. Mix together all ingredients--by hand or in a blender
  3. Spray pan with cooking spray
  4. Pour half of the batter in the pan and cook until bubbles start to form on top
  5. Flip pancake and cook another minute or so until done
  6. Do the same with the other half of the batter
  7. Top with coconut oil, stevia, honey, banana, peanut butter--whatever you want!
Notes
  1. I find that using actual peanut butter in this recipe will give the pancakes a little more moisture--but if you're watching your calories they still taste good with PB2 =)
