World's Best Granola Recipe

Can I really call this the world’s best granola recipe? I think I can. My mom started making this when I was in high school and I’ve brought this granola to China, Ethiopia, Kenya, Senegal, Mexico…you get the picture. It’s been all over. And everyone who has it gets addicted!! Now, keep in mind that just because this is healthy, does NOT mean that it is low in calories. It’s got a lot of nuts in it–which translates into a lot of calories. So portion out the amount you want and then stop eating (if you can!)

Ingredients
- 6 cups old fashioned oats
- 1 cup almonds slivered
- 1 cup sunflower seeds
- 1/2 cup pecans chopped
- 1/2 cup walnuts chopped
- 1/2 cup dark brown sugar
- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 1/2 cup raisins, optional
Instructions
- Preheat oven to 250°F.
- In a large bowl, combine the oats, nuts, and brown sugar.
- In a separate bowl, combine the maple syrup and oil.
- Combine both mixtures and pour into a large baking/cake pan.
- Cook for 1 hour and 15 minutes to 1 hour and 30 minutes, stirring every 15 minutes to achieve an even color.
- Remove from oven and let sit until set.
- Add raisins and mix until evenly distributed.

Hi Rachel, a terrific recipe, and you mentioned that because of the nuts, there are a bunch of calories in it. So here’s a suggestion, (I might be biased here) but if you switch the walnuts and pecans with chopped Tiger Nuts (OK you may well be asking “What the heck are Tiger Nuts, and you can find out at http://www.tigernutsusa.com) you will get even more sweet taste, less calories and fats with way more fiber. Tiger Nuts have 5 times the fiber of walnuts and three times the fiber of almonds, with less fats and calories, PLUS, they are not nuts, they are a tuber!!!
