YUMMO! French toast CAN be ridiculously bad for you…super thick white bread with lots of butter and syrup…not my french toast! I’ve replaced butter and syrup with a pumpkin cream cheese frosting–so you still get a lot of flavor without a ton of extra sugar or fat. I hope you enjoy this yummy and HEALTHY french toast recipe!

Whole Grain French Toast with a Pumpkin Cream Cheese Frosting

French Toast
  1. 2-3 slices whole grain bread
  2. 1 whole egg
  3. 2 egg whites
  4. splash of almond milk
  5. 1 tsp vanilla extract
  6. 1/4 tsp cinnamon
  7. stevia to taste
Pumpkin Cream Cheese Frosting
  1. 6 TBS fat free cream cheese, softened at room temperature or in the microwave for 15 seconds
  2. 2 TBS pure pumpkin
  3. 1/4 tsp cinnamon (or pumpkin pie spice, if you have it)
  4. stevia, to taste
Instructions
  1. Heat pan on medium heat
  2. Spray with cooking spray
  3. Whisk eggs, almond milk, cinnamon, vanilla extract and stevia
  4. In a shallow bowl, dip bread into egg mixture and coat both sides
  5. Place bread onto pan
  6. Cook 3-5 minutes, or until eggs are set on the bottom and golden brown
  7. Flip and cook 3-5 minutes, or until eggs are set on the bottom and golden brown
  8. Combine pumpkin, cream cheese, cinnamon and stevia together
  9. Remove French toast from pan and top with pumpkin cream cheese frosting and top with cinnamon
  10. Enjoy!
Notes
  1. Best to use day old bread--so let the slices of bread sit out overnight. If you forgot, don't worry it will still be super yummy =)
