YUMMO! French toast CAN be ridiculously bad for you…super thick white bread with lots of butter and syrup…not my french toast! I’ve replaced butter and syrup with a pumpkin cream cheese frosting–so you still get a lot of flavor without a ton of extra sugar or fat. I hope you enjoy this yummy and HEALTHY french toast recipe!
Whole Grain French Toast with a Pumpkin Cream Cheese Frosting

French Toast
- 2-3 slices whole grain bread
- 1 whole egg
- 2 egg whites
- splash of almond milk
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- stevia to taste
Pumpkin Cream Cheese Frosting
- 6 TBS fat free cream cheese, softened at room temperature or in the microwave for 15 seconds
- 2 TBS pure pumpkin
- 1/4 tsp cinnamon (or pumpkin pie spice, if you have it)
- stevia, to taste
Instructions
- Heat pan on medium heat
- Spray with cooking spray
- Whisk eggs, almond milk, cinnamon, vanilla extract and stevia
- In a shallow bowl, dip bread into egg mixture and coat both sides
- Place bread onto pan
- Cook 3-5 minutes, or until eggs are set on the bottom and golden brown
- Flip and cook 3-5 minutes, or until eggs are set on the bottom and golden brown
- Combine pumpkin, cream cheese, cinnamon and stevia together
- Remove French toast from pan and top with pumpkin cream cheese frosting and top with cinnamon
- Enjoy!
Notes
- Best to use day old bread--so let the slices of bread sit out overnight. If you forgot, don't worry it will still be super yummy =)
