I’m obsessed with two things: peanut butter and chocolate. Since I’ve already made chocolate peanut butter protein bars, I wanted to make peanut butter ones, but add some chocolate chips to them. The result? Amazing. The best thing about these protein bars is that they are SO easy to make–just get out a food processor and boom. No baking necessary. These are also gluten free, and can be made vegan.

Total Time
15 min
Ingredients
- 3 cups Organic puffed rice cereal (can sub rolled oats)
- 4 scoops Peanut butter protein powder (can use vanilla too)
- 1 cup dates
- 1 cup honey
- 1/4 cup natural peanut butter
- 1/4 cup pb2
- 1/3 cup dark chocolate chips
- 1 tsp Himalayan salt (can use regular)
- 1 tsp vanilla extract
Instructions
- Add all ingredients except chocolate chips into a food processor and process until all ingredients are combined and a big ball of dough forms
- Remove dough and fold in chocolate chips (if the dough is hot, wait a little bit so it doesn't melt the chips)
- Spread dough onto a baking sheet and put into the fridge for about an hour
- Use a pizza cutter to cut into 16 squares
- Enjoy!
Notes
- The consistency of the bars may change depending on the protein powder you use. If the dough isn't sticky enough, add more honey.
- If you want to cut down on the sugar in this recipe you can replace some of the honey with peanut butter--this will change the nutritional content below.
- To make these vegan, use vegan protein power (I like Sunwarrior) and replace the honey with agave.
