It’s Monday! Have you heard of Meatless Monday? Basically, you give up eating meat one day a week to 1. help the environment 2. save money 3. try new and healthy dishes
Is eating meatless hard? If you would’ve asked my husband (a HUGE carnivore) a couple of months ago he would’ve said YES and that a meal isn’t a meal without meat! Since I’ve been cooking on a budget the past couple of months, there’s been no meat (only seafood once in awhile). He’s learned that eating meatless CAN be tasty…and CHEAP!!!!! I like to tell him how much a meal I prepared for him costs so he knows that living without meat is saving us a lot of money.
So you want to start eating meatless once a week (maybe more?) Here are 10 Meatless Monday Ideas that you can make for your family!
1. Crockpot chili!
2. Stuffed potatoes! I’ll make a TON of chili one day and then another day of the week I’ll bake potatoes and do chili stuffed potatoes.
3. Pizza. On whole grain crust with lots of veggies
4. Veggie burgers
5. Vegan sloppy joes
6. Brown rice (or quinoa!), a bean and a green! Easy combo and add whatever spices you want to it
7. Quesadillas–lots of veggies and beans, not a lot of cheese
8. Pasta–keep it whole grain and sneak veggies in
9. Breakfast for dinner! Try oatmeal pancakes, scrambled eggs, toast, french toast, etc.
10. Soup or stew!
