So I had some bananas that I wanted to use up and was trying to think of something I could make for TJ that he would like…so I decided to make banana protein muffins! I LOVED them…so did my mother in law, but my picky toddler didn’t even want to try them =( I’ll try again tomorrow lol. 

Did you know that the typical muffin you buy at the store can have over 400 calories?! Insane, right? These have less than 150 =) 

AND they are full of good stuff. Try these out and let me know how you like them =)

Ingredients
  1. 3 ripe bananas
  2. 1 egg
  3. 2 egg whites
  4. 1/4 cup almond milk
  5. 1 tsp cinnamon
  6. 1/2 tsp baking powder
  7. pinch of salt
  8. 1 tsp vanilla extract
  9. 3 Tbs coconut flour
  10. 1 Tbs flax seed
  11. 1/3 cup vanilla protein powder (I like MRM whey protein powder)
  12. Sweetener (optional--but I added about 5 drops of liquid stevia)
Instructions
  1. Preheat oven to 325
  2. Stir all dry ingredients together
  3. Mash bananas with a fork and mix together with wet ingredients
  4. Add wet to dry ingredients and mix until just combined
  5. Pour into greased muffin tins and bake 35 minutes (could vary depend on your oven...check it at 30 and when they're done when the edges are golden brown and you insert a fork and it comes out clean =))
